You may need to add a little more flour to make the dough moderately stiff. Then, roll it up in plastic wrap to make a log shape. Chill it for about an hour, then slice it in rounds. Place them an inch apart on a baking sheet and bake them at 350 for 15 minutes, or until they are golden brown.

Mix a cup of peanut butter with a cup and a half of oats, plus about a quarter of a cup of dried cranberries. Scoop the mixture with a one-inch cookie scoop and drop the rounds on a parchment-lined baking sheet. You can freeze some batches and thaw them in the fridge as needed or chill them for an hour and then pack them into an airtight container to store in the fridge for up to a week.
